You just can't have one

Noooo I'm not talking about lays potato chips, I'm talking about kale chips!! Made these bad boys by rinsing and completely drying kale, snapped off any stems, tore into bite sized pieces then put in zip lock bag with olive oil and desires seasonings. Put on stick resistant (oiled) pan and bake on 400 something for about 20-30 minutes until crispy.  You can find hundreds of kale chip recipes on Pinterest. #FOODIE


DISCLAIMER: I would only make enough chips for what I want at the moment. I had leftovers the next day, but they just didn't taste right or chippy, they were no longer crunchy, but it might have been that I put them in a container too soon and they were still warm and sweated out. Trial and error my friends trial and error.

Stuffed


Simple + quick = delicious!

Halved a bell pepper, took out the guts (seeds/core) and filled with Morning Star vegan crumbles.  I had already sautéed crumbles with garlic powder and mushrooms.  I filled peppers, placed on a oil sprayed pan and back on 350 for maybe 12 mind? Idk I'm a "eye balling" cook as Rachel ray would say nothing's ever exact, but it always comes out right ;). Of course I doused with hot sauce before I ate it... With a side of sautéed spinach. SN: I think I go through a medium size bottle of Texas Pete every two weeks. #FOODIE

Shawty you a 10

Who knew I'd meet my original size goal of a 10 this soon in the game. Well looks like I did.  I haven't bought hardly any new clothes since I started this weightloss journey. Why? One answer... I'm not made out of money lol. I was wearing the same ol (now baggy) pants and when I did purchase a few new pants they were all elastic waist, not an actual number size.  I finally gave in and got rid of a whole rack of pants and shorts... Shirts we'll come back to later seeing as you can wear shirts too big and not look like a complete slob lol. All that being said to say that I got two new pairs of dress pants today from jcpenney and they were both a size 10.  Before jcp I walked into the plus size store Ashley Stewart, because I saw they were having a huge sale.  I asked the salesperson did they make pants in long (y'all know my long legged struggle), and the girl asked well what size are you? I paused because I literally didn't know what size I was lol.  The girl pointed me in the direction of the tall slacks but said the smallest size they carry was a 12 and that would probably be too big for me I looked more like a 10... Well she was right lol.


Size 16 (sometimes 18) to a 10 in 4 months? I'll take it... but my stomach's not flat yet lol... Lemme find out imuh have to be a size 6 or something hahahaha
