Cali Cakes

Veggie patties, fritters, what have you.  They remind me of salmon cakes so I'm going with that.  Inside the cakes you ask? A California medley blend (also known as broccoli, cauliflower, and carrots). Take steamed California medley mix (tip: use microwave steamable bags).  Now blend in blender/food processor with milk (I used almond milk).  Put in bowl and mix with seasonings (salt, pepper, garlic, parsley), two eggs, and bread crumbs.  I actually had no bread crumbs, I was doing this on a whim and wound up using two packs of cream of wheat instead (for sticking power).  Form with hands into little patties and fry in skillet in about a half inch of oil (I used canola).  Allow to brown on each side, it's that easy.  I then baked mine in oven on 375 for about 10/15 mins to "dry out" or make even more crispier.  Douse with sauce of your choice or eat plain, but I think I'm gonna go with my good ol trusty hot sauce.  I also topped mine with paprika... it makes every food look better lol #FOODIE
